Wednesday is a Baking Day

Peanut Butter cookie cups with Snicker’s Bites… I initially put balls of dough in mini-muffin cups, baked the cookies for 6 min. and then inserted the Snicker’s bite candy in each cup. Put the pan back in the oven for a couple of minutes and let the chocolate melt.

I wasn’t that impressed with the way they turned out, so made a few on a cookie sheet and they turned out much better.

They’re like the peanut butter cookies with a Hershey’s Kiss inserted in the center. (or a Reese’s Peanut Butter Cup candy) Very tasty and so easy to make when you use refrigerated cookie dough (as I did this time).

We have truly enjoyed our retirement years, and have fulfilled one of our primary goals in life and that is to own a home overlooking train tracks so we can watch trains 24/7.
