The youngest son-R, HIS eldest son-A,  and our niece-J were up for the weekend. R brought his Tregar smoker and we smoked two racks of ribs and a tri-tip roast. The ribs were delicious, but had a bit more fat than they appeared to have when we put them in the smoker. We tried a number of new side dishes, including a Tomato and Sweet Corn Salsa, and a bacon-wrapped cabbage that we cooked in the smoker for one hour. The recipe for the Tomato and Corn Salsa is very easy.

Ingredients
  1. 1 small red onion, chopped.
  2. 1/2 teaspoon salt.
  3. Juice of 2 limes.
  4. 4 red or green jalapeño chiles, seeded and finely chopped.
  5. 4 medium tomatoes, chopped.
  6. 1 cup fresh or frozen (thawed) corn kernels.
  7. 1 cup chopped cilantro.

Other side dishes were cole slaw and hot french bread. A very nice meal…

We always experiment with food when the kids come up for the weekend. Lots of fun and even the dishes that don’t turn out to be favorites are at least edible!

The easiest way to define myself is as a very happily married woman with two sons and two grandsons. I used to own a secretarial and desktop publishing business, but closed it when my husband retired in 1999. We have truly enjoyed our retirement years, and have fulfilled one of our primary goals in life and that is to own a home overlooking train tracks so we can watch trains 24/7.     Oh, I love a good corn salsa. Thanks for sharing the recipe. Chipotle Grill has a good corn salsa that I love, but there is no tomato in it. So glad you had a wonderful weekend with your family. Those times are the best!

      He’s doing good. He even picked a few weeds this afternoon! Getting stronger by the day, he’s relieved me of driving duty, even though I had begun to enjoy being the driver of the family. LOL
